These knives feature a hand-ground VG10 monosteel with a nice taper and convex hamaguri grind. This fine grind makes for smooth cutting and excellent food release with a long edge life and excellent stainless properties.
VG10 can be more work to sharpen, but the convex grind on these keeps the blade thin as it continues to be sharpened.
