Hinoki wood is a dense and fragrant Japanese soft wood in the cedar family with very strong anti-microbial properties. It is used in Japan traditionally as a surface for cutting and for hot tubs. Hinoki is very easy on edges, especially on hard high carbon Japanese steels that can be chipped easier on plastics and bamboo.
