C'est cette France que l'auteur nous invite à découvrir en nous faisant pénétrer dans les petits ateliers de nos villages. Comme les spécialités culinaires et les parlers locaux, le couteau régional est un marqueur culturel de l'attachement à un territoire, et le symbole d'un art de vivre à la Française, de notre exception culturelle. Ethnographe et spécialiste de l'histoire de la coutellerie française, Christian Lemasson collabore régulièrement à une revue de coutellerie d'art. Il a également participé à des documentaires sur le couteau laguiole, qui ont été diffusés par France 3, France 5 et Arte. Il nous livre ici le fruit de vingt années de pérégrinations et de recherches historiques à travers le pays.

Each place, each region of France has its own knife, a knife that was in the pocket of our ancestors, a knife that we carried close to us, an intimate companion of rural life. It is this France that the author invites us to discover by taking us into the small workshops of our villages. Like culinary specialties and local languages, the regional knife is a cultural marker of attachment to a territory, and the symbol of a French art of living, of our cultural exception. Ethnographer and specialist in the history of French cutlery, Christian Lemasson regularly contributes to an art cutlery magazine. He has also participated in documentaries on the Laguiole knife, which were broadcast by France 3, France 5 and Arte. Here he gives us the fruit of twenty years of wanderings and historical research across the country.
