A highly versatile condiment that can be the only seasoning you need for stir fry, or an umami bomb to add at the end to dishes like ramen, salads and pastas, or a way to significantly increase tenderness and flavor to meats by using as a marinade.

Two whole bulbs of garlic are inside this jar of goodness. 

Koji is a natural bacteria that improves gut health, and also breaks down protein into amino acids. Japanese cooking can not exist with out koji, as it is used to make staples such as miso, soy sauce, and sake. 

If marinating meat or fish, recommended marinating time is about 30 minutes to half a day with 3-4 tablespoons of paste for ½ pound meat or fish. 

Also, making Korean namul cannot be easier—mix Shio Koji Garlic Paste (1 tbsp) and sesame oil (1 tbsp) first, and dress your choice of boiled vegetables (100g / 3.5 oz) with the mixture. We recommend bean sprouts, garlic chives, broccoli, spinach or carrots.
