Vintage Galot 10.5" hand forged stainless steel boucher butcher knife made in France from approximately the 1930s to 50s judging from the shape of the carved beechwood handle (not hand carved but not mitre cut either) along with the rosette rivets which largely faded from use in the 1960s.
Blade has been sharpened in a bit but still has lots of use left in it. These are used similar to a bullnose butcher for slicing steaks and chops as well as blocking out primals prior to breaking with a smaller knife.
