Carbon (C): 0.20–0.25% | Chromium (Cr): 16.5–17.5% | Molybdenum (Mo): 1.0–1.2% | Vanadium (V): 0.10–0.20% | Nitrogen (N): 0.15–0.25% | Nickel (Ni): 0.20–0.50%

N680 is a nitrogen‑alloyed stainless aimed at strong corrosion resistance with decent edge holding. At ~57–60 HRC it sharpens readily and resists staining in kitchen or marine use. Good choice where rust prevention and easy upkeep are priorities.
