Yoshikane has been making kitchen knives at a small, family-run forge in Sanjo, Niigata since 1919.  They've earned their reputation for excellent forging and heat treatments that make for easy sharpening and great edge life for both single and double-bevel knives. This is especially true regarding the thin grinds provided on their double bevel knives.

For mid-weight Japanese knives, they cut like much thinner blades.
