This premium rice vinegar is crafted with a unique and traditional method at Sakamoto Kurozu, a 200-year old vinegar brewery in Kagoshima Prefecture. In Kagoshima, vinegar is brewed and aged in earthenware jars for an entire year, exposed to natural elements outdoors. 

This vinegar is made using only three ingredients; rice grown and harvested in Japan, rice koji, and local ground water. 

For the whole duration, brewers painstakingly monitor the progression until the ingredients turn into an exquisite vinegar that exhibits a mellow, umami-rich flavor with a well-rounded aroma and beautiful amber hue. It’s great for making dressings and marinades, adding to sautéed dishes, mixing into drinks and sweets, or as is.
