Hitohira FJ 210mm Kiritsuke Gyuto SG2 Damascus White Linen Micarta Handle

Stainless SG2 core with a nickel / stainless suminagashi cladding. Hand ground with a nice taper and convex hamaguri shaped blade face. The fine grind behind the edge makes for smooth cutting and the convex face with irregular surface makes for excellent food release.

SG2 stainlesss has a long edge life especially at very fine finishes that stainless steels don’t often excel at.

while SG2 is stainless if left wet or otherwise neglected, edge life will be effected and corrosion can form (think stains - less, not stain proof).

Linen micarta handles are are comfortable and have a slight texture to maintain grip during use. This is a step-up from you basic pakka handle.
