New old stock Friedr Herder Abr Sohn Solingen Germany 7.25" Argentine style facón knife in unused condition.

This knife has a hand ground carbon steel blade which looks to be early to mid 20th century manufacture, brass bolster and stag scales with spun nickel pins. It has a footprint similar to a chef knife but has a narrower blade thicker at the spin characteristic of knives made for Argentina, Brazil, Uruguay and Paraguay that were used as all purpose knives (including as fighting knives) and are sometimes referred to as "gaucho knives". Beginning in the 19th century Solingen exported these knives to South America and many of the old makers are still well known in these countries.

It is a little unclear on the age of this knife, it is possibly from a group of old stock blades that were assembled at the Herder workshop in Solingen in the early 1990s, but the blade would far out date that. In the early 90s when the business was struggling it sold a lot of un-handled old stock blades that were then later handled outside of Solingen, this is not one of those. This knife pre-dates the purchase of F Herder in 2015 by the Burghaus family  (Benno and son Stephan) who are the current owner / operators.

There is no sheath for this knife.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
