Unmarked carbon steel 8" stiff slicer with rosewood with brass cutlers riveted handle in unused condition made somewhere from the 1960s to 90s.
This knife was made in Theirs, France and found in a lot of knives dating from the 1930s to 90s but judging from the materials and work this is from approximately the 1960s to 90s. The machine made compression or cutlers rivets come on the scene in the 60s.
These represent the more recent iteration of the flat plate or plate-semelle knife, originally forged without a bolster and handled economically, these were stamped but look hand ground finished after mechanically ground.
Tough and hardworking these will be fine getting up near bones.
Not stainless! No dishwasher or soaking.
