Sabatier La Trompette 12" cuisine massive / Nogent style carbon steel chef knife made in Thiers for sale in Paris & for export between 1920 and 1940 as evidenced by the addition of M Pouzet on the stamp.
This knife is in excellent lightly used shape and is a great reference for the dimensions and feel of this classic. Blade is very full and barely used ,nice and straight. The carbon steel blade was hand forged after being drop forged and hand ground with a brazed joint nickel ferrule and mellowed pear wood handle. Markings are nice and crisp and the blade has a fresh edge. There is a tight hairline crack in the handle that has been sealed with epoxy.
This brand was the offshoot of the 84 Rue St Honore Sabatier with open hand mark made for the Paris knife shop at 84 Rue St Honore in Paris which finished knives forged in Thiers in Paris.
La Trompette was started in the mid 19th century and had a very long run, exporting a lot outside of France, most 19th century Sabatier knives I find are La Trompette and they must have had a robust export plan given there were so many other makers in Thiers at the time.
Carbon steel knives are guaranteed to rust if left wet, dry after use and enjoy a new a patina which will form.
