Trade in santoku in good condition without original packaging. This stainless steel santoku has been thinned to regain some of the intended thinness so it's a bit narrower than factory but still has plenty of height left to be an everyday user.

Hand wash and towel dry after use. Do not air dry or use the dishwasher. Even stainless steel can oxidize with prolonged exposure to moisture.

Avoid twisting, scraping, or use on dense or hard materials. Use on wooden cutting boards only. Don't twist or scrape the edge on the cutting surface to avoid early dulling and edge damage.

Sharpen by hand using whetstones starting around 1000 grit progressing to at least 4000 and up to 8000 depending on steel type and edge geometry. Finish with a borachrome strop for lower finishes and a chromium strop for higher finishes. Avoid pull-through sharpeners and non-water-cooled mechanized systems. Ceramic honing rods are preferred for as-needed edge maintenance. If you have to use a honing rod to be able to use the knife comfortably, it's time to sharpen the knife.
