Thiers Issard 14" carbon steel chef knife lightly used, assembled from and old stock blade and handle from approximately the early 2000s to 2015ish. 

Thiers Issard claimed these were old stock pre-WW2 blades forged in Thiers, which is quite possible. The method of forging used to produce this blade, which looks to be hand-forged after drop-forged with lots of taper and one side a little flatter than the other is indicative of the time. The ebony handle and aluminum ferrule were also old stock, but the stick tang does not fit all the way through like the old Cuisine Massive / Nogent Style knives, rather this one has been epoxied. 

These old lightweight 14" chef knives were used for big jobs, especially cutting roulade from a large cut of beef that would need to be braised. The meat would be cut into a thin sheet and rolled up with various ingredients, then braised.
