 Sabatier Professional 25cm / 10" stainless steel chef knife from approx the 1960s to 1970s. This was hand forged after being drop forged in the old Thiers style. This lends to giving them a great geometry, making them nimble where they need to be and tough in the heel. These are the quintessential post war French chef knife. 

Blade is very full, it has been sharpened in very little, it did have a kinked tip which has been corrected but it lost a little length in in the process.
