Drop forged stainless steel Ideal Pattern (full tang with round integral ferrule shaped bolster) boning knife from approximately the 1960s to 80s, they appear to have been hand ground but not hand forged after being drop forged, small knives like this were the first to have the hand forging skipped starting in the 1960s in Thiers France. 

Lightly cleaned and sharpened these are otherwise unused
