Ed Wusthof (est. 1814) 11" chef knife with old Trident logo on hand forged carbon steel blade (tapered tang) with fruit wood (pear?) handle riveted with old style silver nickel pin and silver nickel washer rivets.

This knife has been confirmed by Wusthof to be an authentic 147-11 from the 1930s and is in excellent condition with a very full blade. The Trident stamp without the inclusion of Dreizackwerk would indicate that it could have been made specifically for export and is consistent with the original owner being from the Middle East.

This knife pre-dates Wusthof's model of automation replacing hand work in the Marshal Plan era re-tooling of post WW2 Solingen. Lots of Solingen's industrial equipment was either destroyed or to taken by the British after the war so a lot of industry was re-imagined. Mr. Wusthof imagined having as few employees as possible and hence this era of German knife making begins.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
