The Opinel mushroom knife is a must for foraging. Its got a thin, curved 2.75" Blade, beechwood handle and a boar hair brush for easy cleaning of soil. Pre-pierced handle to accommodate a small rope. 12c27 Stainless steel.

Created in 1890 in Savoie, France, Opinel folding knives are the favorite of every French household and one of the most recognizable pocket knives in the world. The blades are stamped, heat treated, ground and polished to their unique profile and smooth cutting feel. Additional chromium is used in the 12c27 stainless steel blades to ensure rust-resistence and both our carbon and stainless Opinel lines sport Beech wood handles. The ring lock provides safety in keeping the blade secure during storage or while in use.

Hawkbill Blade Shape

A hawkbill blade features a downward-hooked edge that curves sharply toward the tip, designed to pull material into the cut. The inward curve increases bite and cutting efficiency but requires deliberate handling and sharpening technique.

Medium - Western Stainless

We recommend hand sharpening on whetstones to a low-medium finish starting around 400 and progressing to 1000 grit with a monodiachrome strop finish. Gentle use with steel honing rods work well for as-needed edge maintenance. Avoid pull-through sharpeners and non-water-cooled mechanized sharpening. If you have to use a honing rod to be able to use the knife comfortably, it's time to sharpen the knife.

12C27 is a clean Swedish stainless formulated for fine sharpness, good toughness, and easy maintenance. Typically ~56–59 HRC, it takes a razor edge quickly, resists chipping well, and is common in Scandinavian outdoor and kitchen knives.

About Opinel


In 1890, Joseph Opinel turned 18 and worked in the family workshop. With a passion for new machines and innovative technologies, he built his own camera and soon became the photographer for weddings and special events in his area. Led by his passion for machinery and the manufacturing process, he decided to invent an object which he could manufacture using modern technology. Against his father's wishes, he spent most of his free time refining the shape and manufacturing of a small pocket knife: the Opinel No.08 was born!

Opinel has continued to contribute to the legacy of traditional French knifemaking, and over the last 100 years, the design of the classic Opinel pocket knife has remained largely unchanged. The blades are stamped, heat treated, ground and polished to their unique profile and smooth cutting feel. The iconic ring lock provides safety in keeping the blade secure during storage or while in use.
