Refurbished Ancienne Maison (Sabatier Trumpet) 20cm Chef Stainless Thiers 1950s-60s

Stainless steel forged 20cm (just short of 8") chef knife made by Sabatier Trumpet in Thiers for the American Ekco import brand Ancienne Maison.

This knife had been sharpened in enough to warrant a thinning, these are narrow to begin with but it is not a super deep chef knife, great for use focused at the tip and front half with some additional support coming in at the heel, not intended for all heel focused work. 

 These were drop forged to form the blade shape and bolster and then hand forged to draw out the tang and thin the blade, these were hand ground and given a fine finish and represent some of the finer work done in their day. The name Ekco is associated with cheaper kitchen equipment but these are not that and fly under the radar sometimes. They were produced by Sabatier Trumpet in Thiers France as their trademark guarantees.
