Hand forged after drop forged hand ground carbon steel chef knife made in Massachusetts by the venerable Dexter company.

This knife had been sharpened in leaving the edge a bit thick, it has been re-ground along its faces bringing it back close to it's original thickness. It had seen some rust along it's life as well which left some pits after its removal, most have been ground away with the thinning but there are still a few patches. The dark rosewood handle is nice and secure with no cracks but it definitly shows wear, this knife has definitely seen action but is back for round two. 

Before they were known for their economical stainless knives (especially with the white plastic handles) Dexter was the Harrington Cutlery company which was then named Dexter after Mr Harrington's son. They are one of the USA's oldest knife making firms with their roots along the Green River in Massachusetts shared with some of the USA's finest old knife making.

This knife is a great example of the interface between industrial production and skilled handwork, hand forged after drop forged springy steel that holds an edge well and sharpens super easily and the fine hand ground blade is impossible to make without skilled smiths and grinders. It's characteristic blade shape; wide & full bellied with a flat heel and the thin convex ground springy steel is a unique Dexter style.
