Trade in petty in good condition with original saya. This iron clad carbon petty was used in a professional setting and the previous own did some cosmetic polishing resulting in a horizontal scratch pattern. While it's different than the factory mirror finish, the pattern is uniform so it does not stand out as an eye sore. The blade has been sharpened in about a 1mm so the edge is tougher than factory but will need to be thinned before too long. The tip is just a little more curved than original grind was.

Forged at Tanaka Hamono in Sakai Japan this will be much easier to sharpen than the average shirogami 1 which can feel a little stiff. Tanaka's work is really exceptional, and one of our shops favorites. 

Comes with a fresh BC edge.

  • This is a carbon steel knife made from thin, hard steel.
  • Hand wash and towel dry after use. Do not air dry or place in the dishwasher.
  • Expect oxidation (color change, staining, spotting) with use.
  • Prolonged exposure to moisture or food debris will cause rust; remove any rust with a light abrasive.
  • Remove surface rust gently with a mild abrasive and progress to more aggressive abrasives if needed. Coarse abrasives will leave scratches in most finishes.
  • Avoid twisting, scraping, or use on dense or hard foods and surfaces to avoid early dulling and edge damage. If you wouldn't bite into it, don't cut it with this knife.
  • Use on wooden cutting boards only. Do not use bamboo, plastic, stone or metal cutting surfaces.
