We just got in a fresh batch of stones from Japan and immediately put together this kit to help people with a complete set to approach double bevel sharpening. 
This set is designed for sharpening both Western (stop at 1000 grit) and Japanese (continue through to 6000) knives, along with a stone holder, strop for deburring after sharpening, and flattener to help keep stones level. 
This kit was designed to be used to sharpen the broad majority of both Japanese and Western knives that come into our sharpening service with narrow double bevel edges. When sharpening knives with this standard blade edge profile, skipping over the intermediary grits is acceptable, but additional stones might be needed for wide bevels, such as the main bevel on single bevel knives or wide beveled double bevel knives. 

Skipping over the intermediary grits is acceptable but additional stones might be needed wide bevels such as the main bevel on single bevel or wide bevel double bevel knives.  400 to 600 grit between 220 and 1000 grit, and a 2000 to 3000 grit can be used in between the 1000 and 6000 included in this kit, an additional finer 8000 might be necessary for some extra fine finished knives but 6000 is sufficient for a huge variety of hard steels.
