Wild Cantabrian white tuna (albacore) fillets preserved in pure olive oil. Olasagasti sources albacore caught one by one with selective pole-and-line methods during the traditional summer harvest. At the family cannery in Markina, Biscay, the loins are hand-cleaned, steam-cooked, and packed with olive oil and sea salt.

Mildly briny and savory with a firm, flaky texture. Flake over a classic Basque potato salad or layer with roasted red peppers on crusty sourdough.
