While yuzu has been getting most of the attention, sudachi is another Japanese citrus that is only now making a splash outside of Japan.
A green citrus that looks a lot like a lime, with a strong tartness and a bit of spice. This bottle is 100% sudachi juice with no additives or preservatives, and contains about the same as 40 sudachis! A small drop adds a significant punch to any dish.
Made with fresh sudachi—harvested from mid to late-September in Tokushima Prefecture, you can use this similarly to how you would use lime or lemon.
Traditionally sudachi is used in Japanese cuisine with sashimi, grilled fish or cold noodles, but also makes excellent salad dressing, ceviche, desserts like cheesecake or pie and drinks (hello sudachi margaritas). A drop of this in a raw oyster is also divine.
