Tichet was one of the few knife makers to continue to make knives in Paris into the early 20th century and have a distinctive geometry and feel as well as the distinctive Lion stamp. The forging, heat treatment and grinding of Tichet knives in this era are really excellent, some of the best work being done in France at the time.
These chef knives sport a very wide heavy heel capable of cleaver like work, chopping small bones and separating joints that quickly tapers into a thinner tip half suitable for vegetable work. While is has a big footprint and is heavy in the heel is is still nimble and maneuverable.
This knife was sharpened down some, originally a bit wider its edge got thick and was thinned along the faces to bring it back to a good geometry to slice with, the hot stamps are nice and deep so not much was lost.
The original handle presumable cracked or was damaged and has been replaced with a slightly smaller but very well done bubinga one with what looks to be the original nickel ferrule ring.
