New old stock 9.5" chef knife from Thiers, made approximately from the 1950s to the 60s, with a hand-ground, hand-forged carbon steel blade, nickel ferrule ring, and "ebonized" beech handle
No blade markings, but these would have been made in Thiers or nearby Saint-Rémy. These have a slight S-grind, with a slight concavity in the center of the blade and a bit of a bulge in the 1/3 near the edge; this lightens the knife, improves food release, and strengthens the edge area.
Cuisine massif / Nogent-style knives are characterized by one-piece wood handles, with a rat-tail stick tang extending to the end of the handle and a round steel or aluminum ferrule. ‘Cuisine Massif’ was used to describe the style in Thiers, as Nogent was a rival knifemaking city.
We found these blades separate from the handles, which were also new old stock from the same period. We shortened the tangs and added 2 part epoxy to the handles as well as black epoxy putty hold the blades firm and to seal any openings for water to get in.
Handles are (dyed with iron acetate and tannin from oak galls). It is non-toxic, but expect some transfer to hands after the first few uses.
Expect minor cosmetic imperfections, knife you recieve might vary from photo very slightly
