Unmarked but nicely made hand forged carbon steel and 5 pin beech handled 10" bullnose scimitar, most likely made in the USA around the 1920s, could be older or a little younger, the hand forging of these type work knives didn't go into mid century it seems.

Blade has fresh edge (steel felt nice and crisp, not too soft) and the handle is free from gaps, cracks or rot. No funky odors, smells like a crayon actually.  If you are a professional butcher this smell will not last but you will be too happy with the knife to notice.

These are great for slicing chops and steaks and blocking off work at the begining of breaking. The curved spine and edge gives it a little more bit that a straight bullnose which focuses the work on the curved tip. The spine is curved hence bullnose scimitar, a straight spine would be just bullnose.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
