Nakiri

The nakiri is one of the oldest, most continuously use knives in Japan. It's a simple, double-bevel, rectangular blade. The name essentially translates to "vegetable knife" and it's great for that use and not so great for everything else. The nakiri has bee na staple of the Japanese kitchen for hundreds of years and reflects the importance of vegetables in Japanese cooking.
