J. A. Henckels 10” chef knife (no markings but 108 series) made in the end of their production of solid wood handled carbon steel, this one with the widening bolster design of the following 70s stainless knives. This is the very end of the long run of carbon steel Henckels in regular production.
This knife had been sharpened in a bit and has been thinned down along the faces, there were some bends which have been corrected with grinding as much as possible, it is not laser straight but only a very slight bow in the heel and a little drift at the tip. It is just barely nail going thin and will cut nice and smooth. Handle is solid wood (walnut?) and while it has some nicks is secure.
10 3/8” from tip to end of bolster, blade 1 7/8” wide 15.5” overall 8.9 oz
