Gomadofu (sesame tofu) is a traditional Japanese menu item that is often enjoyed in restaurants as it can be a bit involved to make at home.
It is made from sesame and kuzu (a Japanese root that acts as a starch), and is one of the most famous dishes in shojin ryori (Japanese Buddhist vegan cuisine).
We are proud to offer this gomadofu as we believe it is made with exceptional craftsmanship- made by a specialty gomadofu manufacturer, who first dark-roasts the sesame and then grinds it into a paste with stone mortars, leading to an exquisitely nutty aroma, rich flavor, and smooth texture. The roasting and grinding steps are considered so important that the president of the company (3rd generation) conducts the processes personally to maintain the authentic gomadofu flavor. This produces a perfect balance of nuttiness and sweetness and a silky smooth texture with a pleasant chewiness, reminiscent of jelly or panna cotta.
Best with a dash of dashi soy sauce and grated wasabi on top.
Simply pop it out of the container, and eat with a spoon.
