Gustav Emil Ern chef knife with heavy heel and thin tip half of blade, hand forged after drop forged and hand ground with pin and disc riveted walnut or 'ebonized' fruitwood handle.
These chef knives sport a very wide heavy heel capable of cleaver like work, chopping small bones and separating joints that quickly tapers into a thinner tip half suitable for vegetable work.
This knife was sharpened down some, originally a bit wider its edge got thick and was thinned along the faces to bring it back to a good geometry to slice with, the hot stamps are nice and deep so not much was lost. One of the discs of the rivets is missing, on some knives that is a deal breaker for reaching the refurbishing room here but this is a special knife and the handle is still solidly attached.
