Victoria / Forschner 6" Boning Knife 208-6 Carbon Steel Rosewood Switzerland 1950s? 60s?
Unusual carbon steel Victoria / Forschner (not Victorinox, that was their stainless brand) boning knife with rosewood handle with distinctive handle and blade shapes, but in carbon steel and with a very full blade.
Many love the ergonomics of the 'Victorinox' boning knives but are frustrated with the shorter edge life of the stainless steel used. Here is your chance to get the best of both worlds.
Richard H Forschner began selling butchery equipment at the turn of the century, importing butchers scales, knives and equipment mostly from Germany and began working with Victoria who used the now famous brand 'Victorinox' in Switzerland in the late 30s in the lead up to WW2. This relationship with Victorinox became synonymous with Forschner.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.
Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.
We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
