Beautifully forged and ground J Russell Green River Works table knife hand forged after drop forged integral bolstered carbon steel blade with iron pinned cow bone hafts.
While these get called 'butter knives' by many people today these were not thick clumsy blades only suitable for soft foods, they were forged and ground from the same steel used for kitchen knives, back when these were used there was no need for a separate steak knife as these were sharp enough to easily work through meats.
5.25" blade is very full, no re-sharepening having been done, it was forged and ground thin but stiff. Cow bone hafts fit up nice and neat to the integral bolstered tapered tang handle.
From the hey day of American knife making when industrial process and skilled hand labor made for one of the top tier knife making centers of the Europe and America.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.
Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.
We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
