While many Japanese knives come from well-known hubs like Sakai, Sanjo, and Seki, there are exceptional tools and goods produced in under-recognized—but equally storied—craft regions across Japan. In Hyōgo Prefecture, blacksmiths from cities like Ono carry on a tradition of tool and knife-making defined by durability and honest utility. In Chiba and Ibaraki, small workshops near Tokyo produce blades that blend classical forging techniques with thoughtful, modern design. Aomori’s Nigara Hamono is known for bold visual patterns and finely tuned grinds that reflect generations of regional steelworking expertise. And in Shimane Prefecture, the Tanabe family draws from Japan’s ancient tatara iron tradition to create knives with deep historical and material resonance. Known for its fertile plains and diverse crops, Ibaraki is one of Japan’s leading agricultural regions, supplying much of the country with produce and playing a vital role in its culinary culture.
