Laguiole pattern folding knives are the most famous of the French regional style knives originating in the early / mid 19th century with the current footprint being established in the 1860's as a blend of local straight bladed 'laguiole droit' and the Spanish navaja folders which the story goes were introduced to the region from seasonally migrating French shepherds who brought them back from Spain after the winter months. There are plenty of stories told about the bee or mouche (fly) design on the backspring as well as the cross shaped pins on the handle. 

The name and design of ‘Laguiole’ fell into public domain, and can legally be manufactured all over the world by anyone, so it is important to distinguish the different makers of the Laguiole style, as there are vast differences in quality of manufacture and material. There is no mistaking these for cheap imitations.

Established in 1870 and still a family run business, Au Sabot makes knives in traditional and original patterns in Thiers France. They utilize a wide range of new and old equipment and Thiers skilled-handwork is the keystone of their production.
