Tichet boucher hand forged in Paris France in the 19th century with carbon steel blade and wood (type?) handle. 

Tichet was one of the few knife makers to continue to make knives in Paris into the early 20th century and have a distinctive geometry and feel as well as the distinctive Lion stamp. Their production moved to Nogent in the early 20th century and might have been in both Paris and Nogent before they folded up the Paris manufacturing.

Lacking the mark 'Paris' this knife is possibly from before 1891 when the United States passed the tarriff act demanding the country of manufacture to me marked on all products. Not all knife-makers exported to the states and made this change but there are many examples of Tichet marked with this secondary 'France' marking. It is also possible boucher were not exported and this is after 1891.

The forging, heat treatment and grinding of Tichet knives in this era are really excellent, some of the best work being done in France at the time. 

This knife was sharpened down some, originally a bit wider its edge got thick and was thinned along the faces to bring it back to a good geometry to slice with, the hot stamps are nice and deep so not much was lost.

The wood handle possibly had an extra wooden section at the heel of the blade covering the chin, it might have been modified by a previous owner or repaired after damage. 

This knife had been heavily used and had been sharpened down likely from 8", it has been thinned and brought back to a usable geometry. On a maker that was not as important or hard to find as Tichet this would not be our choice but this maker is important in French knife history and thier knives top notch in their day.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
