Hand forged after drop forged stainless steel 12" chef knife made for NY retailer Hammacher & Schlemmer in the 1950s or 60s with classic post war style curved inner handle / bolster junciton and a brass riveted wood (pear or other fruitwood?) handle. Blade is convex ground on faces with a fine finish, and the blade and tang taper indicating it was hand forged after being drop forged. 

This knife has been sharpened in some and is a little thick behind the edge, it would make a great work horse knife for heavier tasks that might damage a thinner bladed knife. Handle is in great shape and is very comfortable in a variety of grips. 

12" blade 2 1/16" at heel and 17" overall 

This is a stainless steel knife. It should be hand washed and towel dried. Habitual dishwasher use will result in degraded edge and handle. Consistent long term exposure to moisture can lead to oxidation.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
