New Vintage Sabatier Professional 36cm / 14" Ideal Chef Stainless Wood 1960s 70s

New old stock Sabatier Professional 36cm / 14" stainless steel chef knife with wood handle from the vintage vault!  

They were hand forged after being drop forged in the old Thiers style. This lends to giving them a great geometry, making them nimble where they need to be and tough in the heel. These are the quintessential post war French chef knife. 

The ebonized (pear?) wood handle has shrunk a little bit over the decades but is free from cracks or defect, the blade is bright and free from marks. The heel side of the blade has a bit of a bow to it, price has been adjusted for this.
