Trade in gyuto in great condition with original packaging. This carbon steel gyuto shows some signs of use via a light grey patina with iridescent oxidation undertones. There are some slight surface wipe scratches and some errant honing marks. This knife comes freshly sharpened in house.
Forged by dentokougeishi blacksmith Yoshikazu Tanaka, the expecations of he expert heat treatments are that the shirogami is easily sharpened and can hold a very fine finish while being tougher than other similar steels and treatments.
This knife is not stainless and special attention must be taken to avoid corrosion. Expect further patina with use and keep clean and dry when not in use to avoid corrosion. No dishwasher. Hand wash and soft towel dry only.
