Full bolstered carbon steel (hand-forged after drop-forged?) Western-style gyuto marked Capco Hand Forged Professional Grade. 

While the name Capco offers little info on this manufacture date, the T and washer shaped rivets suggest an older manufacture date, possibly from the 1960s. Integrally forged Japanese chef knives like this pop up from time to time but not too terribly often. 

The overall footprint of this knife especially in the tip and handle shape is done in a very Japanese style with the western addition of a full bolster. The hardness of the steel is possibly in the 58 range judging from sharpening, but this is an inaccurate measurement. 

The handle has a crack and a missing disc, it was found a bit sharpened in, rusty, and required a thinning. If it was not such an uncommon gyuto to find, I would be on the fence about refurbishing it. However, seeing as it is an interesting iteration of the Japanese, Western-style, chef knife, I think it should get fixed up.

Buy it quick before I convince myself it needs to part of my collection.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and dried immediately after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Twisting, scraping, and heavy use, as well as use on hard and very dense objects can lead to edge damage. Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most Japanese knives perform best at a finer finish starting around 4000. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Ceramic honing rods are preferred.
