Hand-forged after drop-forged, hand-ground carbon steel 8.75" chef knife made in Massachusetts by the venerable Dexter Company. Before they were known for their economical stainless knives (especially with the white plastic handles), Dexter was the Harrington Cutlery company which was then named Dexter after Mr. Harrington's son. They are one of the USA's oldest knife making firms, sharing their roots along the Green River in Massachusetts with some of America's best knife makers.

This knife is a great example of the interface between industrial production and skilled handiwork. Hand-forged after drop-forged springy steel that holds an edge well and sharpens super easily with a fine, hand-ground blade is impossible to make without skilled smiths and grinders. Its characteristic blade shape, wide and full-bellied with a flat heel and thin, convex-ground, springy steel, is a unique Dexter style.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
