These Taiwanese fruit preserves are just that—Taiwanese fruit and not much else. They’re so fresh, it almost shouldn't be called jam; they're closer to a fruit sauce than to jelly. They feature large chunks of fruit, are lower in sugar than conventional versions, and are prepared in micro-batches to ensure the gentlest of processing.

Yun Hai works with with Dolly and Chin, jam makers in Taipei, who make these jams by hand in small quantities (we’re talking stockpot size) to preserve the nuances and aroma of the fresh fruit.


Irwin Mangoes are the mango variety of choice in Taiwan, as featured in the namesake dessert, Mango Shaved Ice 芒果冰. This Irwin Mango Jam is one of the next best things to eating the fresh version of the fruit (the other is Yun Hai's Dried Irwin Mango, ha). Made with fresh Irwin mangoes, lemon juice, and sugar, this jam exudes a pure, pronounced mango sweetness, as well as the pulpy texture of the fruit itself.

The mangoes are sourced from Pingtung, a coastal county in southern Taiwan. The area’s marine biome imparts a more complex flavor to the mangoes grown there—and the terroir is reflected in the jam.
