Sharpening Services
*** ATTENTION! Our Ferry Building location does NOT accept sharpening drop off at this time. ***
At Bernal Cutlery, we specialize in wet grinding and Japanese whetstone sharpening using techniques that provide edges specifically suited for the knife or tool, factoring in its steel type. We will adjust edge geometry and blade thinness if necessary to provide improved geometry for increased performance.
Services Offered
- Walk-in Dropoff: Available during regular business hours. 11am-5pm
- Industry Appointments: Schedule an appointment if you are a professional.
- Mail-in Sharpening: See more info below for how to mail in your knives.
Turnaround Times
- Standard Service: Approximately 3-4 weeks.
- Rush Service: Typically 48-72 hours, depending on workload. Please note that thinning work is not eligible for Rush Service.
Important Information
- Loaner Knives: Chef and/or bread knives available with a deposit.
- Order Notifications: You will receive a text when your order is ready for pickup.
- Storage Policy: Orders left for over 90 days will be donated to a loving home.
- We do not offer rehandling services: Due to limited global supply of Japanese made wa-handles, we cannot offer replacement handles or rehandling services. We do not repair or replace western style handles.
Cleaning Fee
- Dirty Knives: A $5 per knife cleaning fee will apply.

- Standard: $1.25 per inch
- Rush: $2 per inch
- Includes Japanese whetstone wheel and stropping.

Japanese Double Bevel Knives:
- Standard: $2.50 per inch
- Rush: $3.75 per inch
- Includes Japanese whetstone hand finish or natural honyama stone as applicable.

- Hand Pruners: $12

- Machetes, Bush Knives: $1-3 per inch (depending on condition)
- Hatchets and Axes: $15+

- Re-shape Chef Knife Bolster: $5+
- Re-shape Edge / Re-profile: $5+
- Re-tipping or Chip Repair: $5+
- Rust Removal & Buffing: $5+
- Thinning and Resurfacing: $30+ (Not eligible for Rush Service)
- Knife Cleaning Fee: $5 per knife for dirty knives.
Note: We do not work on hygienic tools.
Mail-In Sharpening
For customers who are unable to visit us in person, we offer mail-in sharpening:
- Print and Fill Out the Mail-in Sharpening Form. If you cannot print, transcribe the information onto a separate piece of paper.
- Include First Free Sharpening Cards: If applicable, include them with the form.
- Package Your Knives: Wrap your knives securely in disposable material like newspaper or paper shopping bags. Do not use towels or put tape directly on your knives. Add padding to the box to limit any jostling that may damage knife tips, heels, or edges. Send your box to:
- Estimate and Payment: We will contact you with an estimate within 24-48 hours of receiving your package. Payment will include $10 for shipping ($25 for international). Additional charges apply for insured values over $1000.
- Shipping Back: After payment, we will ship your knives back with insurance and tracking information.

We are a full-service cutlery shop offering sharpening services, Japanese and Western culinary knives, vintage knives, outdoor, pocket and craft knives, cooking tools and accessories. We also offer knife skills and sharpening classes, and more.
We are proud to serve kitchen professionals, knife enthusiasts and home cooks alike. Located in the Mission District of San Francisco, California.
