Forged in Thiers France, this is the top shelf series from K Sabatier and is named for the date of the register of the K trademark. It features a cryogenically treated Z50C13 stainless steel, POM handle and handmade leather sleeve.

The deep freeze treatment refines the structure of the steel gives this steel increased stainless-ness, flexibility, toughness and edge life, thereby increasing it's ability to be thin ground. This series has a lighter weight, sleeker cutting feel and better edge life than the standard stainless series from K Sabatier.

Aine & Perrier Sabatier (aka K Sabatier) of Thiers France has remained a family run business since its inception in the 1830's. The registered K trademark was recorded in 1834 making them arguably the oldest of the many Sabatier companies.

This is a stainless steel knife. It should be hand washed and towel dried. Dishwasher use will result in degraded edge and handle. Consistent long term exposure to moisture can lead to oxidation.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
