Mysterious new old stock stainless butcher knives from Thiers in the 1950s or 60s. Stainless blades are sharpened on the outside of the curve and handles are a dyed beechwood. 

The best guess we have right now for these is for cutting tripe and offal with the tip potentially also used to hook and move pre-cut product. 

Old style cut beechwood handles like these were replaced by mitre cut ones in the 70s and 80s and the compression rivets came into dominance in the early 60s. Otherwise unmarked and very mysterious.
