This series of knives is made from a mono VG1 stainless steel with a rosewood handle. These knives have all the merits of a classic stainless monosteel but with better edge formation and easier sharpening. They have an excellent cutting feel thanks to the fine, convex, hamaguri grinds.
These are made at the same workshop as the old Masakane production in Seki, Japan.
