K Sabatier x Bernal Cutlery Nouvel Ideal collaboration series 6" chef knife with serrated tip. XC75 carbon steel blade with brass riveted palissander handle.

The serrated tip chef knife blends the aggressive cutting ability of a serrated knife with the power in the heel of a chef knife. This helps to cut sometimes difficult ingredients like bread crusts or ripe tomatoes, while still retaining the superior finesse of a straight edge. This smaller version makes a great sandwich or bagel knife.

Our Nouvel Ideal line is an homage to the original Sabatier Ideal model of the 1920s.  Forged full tang integral ferrule/bolster carbon steel construction with brass riveted palissander handles are true to the first Ideals forged in the 1920s in Thiers.  We have added or subtracted some design features on different knives, but the essentials are still intact after 100 years.

Nouvel Ideal series knives are drop forged from a single piece of XC75 carbon steel and tempered to 54-56 HRC. They are hand ground extra thin behind the edge for awesome cutting feel, easy to sharpen and have good toughness, and a great all around workhorse. Carbon steel will develop a patina, and rust if left wet. Dry immediately after use, never soak or put in the dishwasher. Rust can be removed with a light abrasive.

The original Ideal pattern is a blend of two knife patterns.  The original hand forged Cuisine Massive (aka Nogent) with triangular blade, short tang and second ferrule ring and the drop forged, full tang, short bolstered Canadian.  The Ideal line blends the two with its integral, round ferrule extension of bolster, now synonymous with French knives.

Since 1834, K Sabatier has been the dedicated brand of Sabatier Aine & Perrier, a family cutlery business started by Philippe Sabatier in the early 1800’s. The business has been passed down 8 generations, and has remained located in the hills of Thiers, France in the village of Bellevue. They continue to run their company with pride and precision, keeping all aspects of the manufacturing process within the area of Thiers.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
