The winner of the 2013 Superior Taste Award by the International Taste and Quality Institute, this premium soy sauce was crafted by a 330 year-old highly esteemed soy sauce maker in Ibaraki, Japan spanning a jaw-dropping 18 generations. 

It is a "pure" soy sauce, meaning that it is unpasteurized, with live enzymes. 

Created using traditional production methods with wooden barrels that have been passed down in their family for decades. The exquisite taste of this soy sauce comes from the complex umami developed from the bacteria living inside not just the barrels, but from the living organisms in the walls, floor, and columns of the building existing from the Meiji period. 

While you can use this for cooking, its exceptional taste and quality really stands out when you use it as a dipping soy sauce-- such as for sushi, sashimi, grilled meats and fish. You can also dip avocado into it with a bit of wasabi, for a refreshing snack.
