Trade in gyuto in excellent condition with original packaging. This stamped stainless steel knife shows some very light superficial scratches that need to be looked for to see. The edge has been sharpened and is ready to use of the box. Though these stamped knives are thicker that most Japanese ground knives, they still cut smoothly and take new edge well but are still suceptible to edge damage from irresponsible use.
Misono Hamono has been making knives in Seki Japan since the late 1960's. They produce a large amount of knives that are mostly for the western market. The UX10 series has a loyal following among professionals and are a major upgrade to other Japanese knives made for the western market.
