Wax Apples are tart and crunchy, with a subtle sweetness and a green flavor that overtakes one’s senses. The dried form is rare even in Taiwan; the delicate slices are mild but tangy, with that characteristic zing at the end and a chewy texture.
How our Taiwanese dried fruit is different:
We source from independent farmers and coops in famed growing regions. We know which harvest each batch of dried fruit is coming from.
After harvest, the fruit is washed, pared and cut, then brought immediately to local drying facilities, where they can control the application of heat. Keeping the temperature low preserves the most texture and flavor.
Our fruit is sliced thick, not chopped into pieces. This creates the most natural product possible, reducing surface area and keeping as many flavors, nutrients, and juices inside as possible. Each piece of dried mango is made from one half of a fruit.
